We selected this lot directly at the farm during our trip to Panama, the most floral and complex on the table. The kind of profile that immediately draws us in.

From hot to cold, it moves through layers of florals, opening on orange blossom and jasmine, then settling into an elegant rose note as it cools.

A light yuzu note throughout, bringing brightness and complexity. Silky texture, great balance, a beautifully elegant cup.

Process 

The best cherries were selected through flotation, then placed in a fermentation tank for 60 hours. Afterward, the coffee was depulped and placed on African beds directly under the sun to dry for 16 days.
