Harvested from the Colibri lot, this coffee takes its name from a singular area of the farm known for its constant hummingbird activity, a plot recognized for producing distinctive profiles and regularly selected for auction.
A cup that offers a truly unique experience. We find there is a very distinctive dynamic around the acidity, the way it structures the profile is striking. Layered, perfume-like, and vibrant, it offers elegant floral notes and complex fruit character, with a beautiful evolution from hot to cold
The Farm
Located in the cloud forests of Nueva Suiza, near Volcán Barú, Finca Sophia is one of Panama’s most distinctive coffee farms. Established in 2008, it was conceived as an ambitious exploration of coffee cultivation at extreme altitude, and is today managed by Willem Boot, Helen Russell, and David Poh.
Rising between 1,900 and over 2,100 meters above sea level, it is among the highest coffee farms in Panama. In this rare environment, cool temperatures, dense fog, and slow cherry maturation contribute to a distinctive and singular cup profile.
Finca Sophia focuses exclusively on the Geisha variety, grown in this demanding terroir to express both elegance and complexity. Through meticulous farming and thoughtful processing, the farm continues to produce coffees recognized among the most distinctive in the world.
Process
After pulping, the beans underwent a 36-hour dry fermentation, followed by a thorough washing to ensure the complete removal of mucilage. They were then taken to African beds for 12 days of pre-drying, before completing their slow and even drying in the darkroom until reaching 10.5% humidity.
