This Sudan Rume Hybrid Washed is bright, juicy, and full of aromatic complexity. It opens on honeydew and lemon, carried by a sparkling acidity that gives the cup energy and clarity. Floral notes bring elegance, while a touch of eucalyptus adds freshness. The mouthfeel is light and flowing, the finish long, clear, and gently aromatic.

Process

The cherries undergo a meticulous process starting with selection followed by 12 hours of aerobic tank fermentation. Subsequently, they are transferred to anaerobic tanks for 48 hours, and after de-pulping, they undergo an additional 24-hour anaerobic tank fermentation phase. After fermentation, the coffee undergoes drying in a mechanical dryer set at 37°C. It is then stored in a temperature-controlled warehouse, ensuring precise conditions between 18°C and 19°C.
