One of the most elegant Sudan Rume lots we’ve ever had. A clean and refreshing profile, centered on bright citrus tones and fresh herbal nuances. Medium acidity, a silky texture, and a gentle floral touch create a balanced, refined cup.

Process

The cherries undergo a meticulous process starting with selection followed by 12 hours of aerobic tank fermentation. Subsequently, they are transferred to anaerobic tanks for 48 hours, and after de-pulping, they undergo an additional 24-hour anaerobic tank fermentation phase. After fermentation, the coffee undergoes drying in a mechanical dryer set at 37°C. It is then stored in a temperature-controlled warehouse, ensuring precise conditions between 18°C and 19°C.
