A refined washed Gesha from Elida Estate sets the standard.
What immediately comes to mind is a bouquet of flowers. Opening with delicate rose water and white floral notes, followed by a vibrant lemon acidity, balanced by ripe white peach and finishing on a subtle note of geranium, known for its fresh, green, and rosy notes. The cup is highly floral, layered, and perfume-like. The aftertaste is remarkably long and graceful, lingering beautifully on the palate.
Process
Harvested at peak ripeness, the coffee cherries undergo full fermentation in their whole pulp for 30 to 40 hours at Elida, where temperatures range from 13°-15°C at night to 18°-20°C during the day. This meticulous process ensures that the mucilage imparts maximum flavor precursors to the beans before they are pulped, washed, and dried on raised beds for 15 to 20 days.
