Origin: Colombia - Risaralda-Marsella

Farm: Mikava

Altitude: 1850 m

Variety: Gesha

Process: Natural carbonic maceration

We've chosen this coffee for its exceptional qualities, a delightful sweetness and a smooth texture reminiscent of grenadine. It is fermented, but without any unwanted alcoholic notes. Enjoy the vibrant flavors of tropical fruits, ripe strawberries, red berry jam and sweet spices, all wrapped in a rich, syrupy embrace.

Step 1: Cherries are not sorted by density until the fermentation step to preserve natural yeast.

Step 2: During the first week, cherries are sun-dried at temperatures below 40°C to prevent embryo damage. In the second week, drying occurs in shaded areas.

Step 3: The coffee undergoes fermentation using the carbonic maceration method, with tanks pressurized with CO2.

Step 4: To shield cherries from ultraviolet rays, farmers employ an "aerobic slow dryer" for 42 days.
