We have selected two distinct lots from the renowned Finca La Negrita. Lot 21 offers a rich, tropical, and complex cup with a delightful sweetness, while the Honey lot presents a more elegant profile, characterized by citrusy, juicy, and floral notes.
Located in the Tolima region, Finca La Negrita is owned and operated by Mauricio Shattah, who transitioned from his career as a doctor to coffee farming. He now applies his scientific approach to coffee processing, resulting in truly unique and exceptional coffee profiles.
Process:
48h anaerobic process at 16°C, nitrogen-flushed during fermentation, followed by drying in a dark room for 6 weeks.
Adding nitrogen during coffee fermentation creates a strictly anaerobic environment that minimizes oxidation and promotes beneficial microbial growth. It also supplies essential nutrients for yeasts, enhancing protein synthesis and efficient sugar conversion into organic acids and aromatic compounds. This process stabilizes and enriches the coffee's flavor profile.
